• To supervise the daily bar operation and ensure efficient, professional and courteous service at all times.
• To lead the bar team by example, maintaining high standards of service, grooming, discipline and product knowledge.
• To assist the Assistant Bar Manager and Bar Manager in managing the team and coordinating daily operational activities.
• To ensure effective communication and strong cooperation between the Bar, Kitchen, Stewarding, Cashier and other departments.

• To build strong relationships with guests, anticipate their needs and ensure a memorable bar experience.

• To ensure all hotel policies, operational standards, hygiene, health and safety procedures are consistently followed.

Key Deliverables and Responsibilities
Planning & Organizing:

1. Supervise the preparation of all bar mise-en-place and ensure the bar is ready before opening.
2. Allocate daily duties and workstations to Bartenders and Bar Attendants.
3. Conduct pre-shift briefings and communicate operational updates, promotions, VIP guests and special requests.
4. Assist in preparing duty rosters according to operational requirements.
5. Monitor opening and closing procedures, including bar par stock, equipment and handover records.
6. Participate in weekly and monthly beverage, alcohol and liquor inventories.
7. Prepare and verify store requisitions, bar requisitions and stock transfers.
8. Monitor stock levels and ensure sufficient beverage supplies are available for daily operations.
9. Work with the Outlet Manager and Bar Manager to develop themed events, beverage promotions and incentive programmes.
10. Assist in controlling beverage costs, wastage, breakage, spoilage and stock variances.
11. Support the development and implementation of new cocktails and beverage presentations.
12. Ensure all bar menus, price lists and promotional materials are accurate and properly displayed.

Operations:

2. Supervise the daily operation of the bar and ensure smooth, efficient and consistent service during each shift.
3. Lead and coordinate Bartenders and Bar Attendants according to the outlet’s duty schedule and business requirements.
4. Ensure all team members follow established service sequences, beverage recipes, portion standards and presentation guidelines.
5. Conduct regular training sessions on cocktail preparation, pouring techniques, beverage knowledge, bottle handling, upselling and guest engagement.
6. Observe and correct pouring practices to maintain product consistency and minimize excessive wastage.
7. Ensure beverage orders are prepared and issued only against authorized written or printed orders.
8. Check the grooming, uniform condition, punctuality and professional conduct of all bar team members.
9. Ensure the timely setup and closing of all bar areas, including the completion of mise-en-place, cleaning and stock replenishment.
10. Welcome guests, assist with beverage recommendations and ensure prompt, personalized and attentive service.
11. Maintain a professional, friendly and discreet relationship with guests while anticipating their preferences and needs.
12. Promote signature cocktails, premium beverages and current promotions to increase revenue and enhance the guest experience.
13. Ensure the cleanliness, organization and proper maintenance of the bar counter, equipment, glassware and surrounding areas.
14. Monitor the quality, presentation, temperature and consistency of all beverages served.
15. Handle guest complaints and operational issues promptly, escalating serious matters to the Assistant Bar Manager or Bar Manager.
16. Conduct shift briefings and ensure clear communication, follow-up and proper handover between shifts.
17. Maintain comprehensive knowledge of the beverage menu, ingredients, prices, promotions and unavailable items.
18. Support cashiering operations and ensure all payments, discounts, voids and transactions are handled accurately.
19. Monitor bar stock, transfers, breakages, wastage and lost items, ensuring all records are accurately completed.
20. Coordinate closely with Kitchen, Stewarding, Cashier and other operational departments to ensure efficient service.
21. Ensure compliance with Mövenpick Hotels & Resorts policies relating to Fire, Hygiene, Health, Safety and responsible alcohol service.
22. Be familiar with all relevant company documentation and the Operational Standards Manual for the department.
23. Provide performance feedback, coaching and on-the-job guidance to bar team members.
24. Report equipment defects, stock discrepancies, guest incidents and team performance concerns to the relevant manager.
25. Assume responsibility for the bar operation during the absence of the Assistant Bar Manager, as assigned.
26. Carry out any other reasonable duties and responsibilities assigned by the Assistant Bar Manager, Bar Manager or Outlet Manager.

• Minimum 2–3 years of experience in bar or Food & Beverage operations, preferably in a Bartender Captain or supervisory role within hotels or upscale restaurants.
• Strong knowledge of cocktails, spirits, bar operations, service standards, hygiene, health and safety regulations, stock control and beverage cost control.
• Good leadership and team supervision skills, with the ability to support staff training, shift allocation and daily bar operations.
• Guest-oriented mindset with good communication and upselling skills; able to handle guest requests, complaints and operational issues professionally.
• Good command of English; professional appearance, positive attitude and flexibility to work shifts, weekends and public holidays are required.
