OBJECTIVE:
Assist the DoFB in the overall supervision, planning, control and coordination of all F&B administrative and operational tasks
MAIN DUTIES:
Administration
• Participates in menu planning and pricing with DoFB and Executive Chef
• Authorizes beverage store requisitions
• Sign and follow up on all maintenance requests
• Control the Void report, Check Recap, Breakfast consolidated report, revenue report
• PnL explanations
• Draft the monthly management meeting presentation for DFB
• Submit the monthly training plan to Training Manager
• Receive and control the quality of all material with a value superior to $50
• Acknowledge and approve Micros request
• Approve Micros card request
• Vacation plan follow up and approval of the applications for leave
• Correct daily menus
• Initiate all needed purchase requests to be submitted to DFB for approval
• Partially lead the morning briefing
• Liaise with all departments in order to ensure good communication and smooth operations
• Follow up on the implementation of the monthly promotions
• Work closely with Marcom and Graphic Designer for all advertising and communication collaterals
• Update the monthly promotion plan after each promotion meeting
• Follow up on the monthly cutlery and linen inventory
• Send out the weekly FB management schedule to RM office
• Reply to the Medallia guests comments
• Communicate any guest complain to Duty Manager
• Handle daily administrative tasks
• Authorized and monitor Void made in the outlet
Financial and Revenue Responsibilities
• Communicate the financial target (budget) to the team
• Is active and work hard to reach the budget
• Minimize cost linked to F&B operations
Training and Human Resources Management
• Develop trainings in accordance to the operational needs
• Train the team according to the training plan
• Sign and acknowledge all training check lists
• Establishes effective employee relations and maintains the highest level of professionalism, ethic and attitude towards all hotel guests, clients, heads of department and employees
• Ensure proper manning according to the hotel activities
• Control the grooming of each FnB staff
• Issue Disciplinary actions in accordance to the hotel policy when needed
Guest Service Responsibilities
• Ensure full guest satisfaction at any time
• Develop customers loyalty and recognition
• Introduce and up sell any special events / promotions
• Gather guest feedback and report to DFB
Operational Responsibilities
• Ensure proper atmosphere of each outlet according to the time of the day (music, lighting, aromas, temperature…)
• Check all buffet set up
• Check restaurant set up
• Ensure full implementation of the Sofitel brand standards
• Ensure proper application in operations of all the trainings and instructions given by the management
• Observe service, analyse areas of improvement and suggest solutions to DFB
• Get involved in the preparations and operations of any major events
• Control and ensure the cleanliness of the all bar counters and back offices
• Ensure proper organization of each service stations
• Ensure efficient sequence of service
• Handle and follow up on any guests complains
Meetings to attend/ lead
• Partially lead the daily FnB morning briefing
• Partially lead the be monthly promotion meeting
• Attend the weekly pre con meeting
• Attend the HODs morning briefing in the absence of the DFB
• Lead the monthly FB manager meeting
• Attend be weekly Management Cocktail
Miscellaneous
• All ambassadors are required to comply with every reasonable request from their hierarchical supervisor(s) within an amount of time that it takes to comply under normal circumstances.
• All ambassadors may be assigned to other duties in the hotel as and when required by business levels.

Yêu cầu công việc
• At least 2 years in similar role in a luxury hotel
• Bachelor degree required
• Excellent communication skills
• Strong leadership skills
• Good English
