Mô tả công việc
Your Role
We are seeking a hands-on R&D executive to join our team for the Tết 2027 gift box campaign. You will own the full product development cycle — from recipe creation through to mass production handoff — for a curated collection of baked confections produced in-house using our machine. You'll be developing recipes, running tastings, calibrating equipment, and ensuring every product scales cleanly and holds up on the shelf.
Responsibilities
Recipe Development
- Develop, iterate, and document recipes for Tet confections (cookies, pineapple cakes, fruit-filled pastries,…) aligned with the campaign's product brief and brand standards.
- Run structured internal tastings across multiple recipe iterations per SKU.
- Document all recipes in BOM, production instructions and control COGS.
Equipment & Scale-Up
- QC the recipe during production and calibrate the machine at production speed.
- Identify and resolve recipe adjustments needed for machine compatibility at scale.
Quality Control & Compliance
- Conduct shelf life testing at ambient conditions targeting minimum 45-60 days stability.
- Coordinate external lab testing for nutrition panels, allergen verification, and microbial analysis.
- Prepare product declarations (Vietnamese + English), allergen matrices, and storage instructions for product labeling.
- Conduct regular tastings and evaluations to ensure products meet or exceed quality standards and are aligned with original recipes.
Production Support & Training
- Produce production-quality samples for photoshoot, B2B sampling, and internal review.
- Support pre-production trial runs and provide daily QC oversight during peak production.
- Provide training sessions for production staff, sharing techniques and quality benchmarks.
- Troubleshoot production issues in real time.
- Sign off on QC release for B2C launch and B2B delivery batches.
Quyền lợi được hưởng
- Salary based on experience and skillsets.
- Mind food (we reimburse for cultural consumption).
- Discounts in our bakery, cafés and lounges.
- Potential for recurring seasonal engagement (Mooncake, Tết) based on performance.
Yêu cầu công việc
- 2+ years of proven experience in pastry R&D, product development, or food production.
- Hands-on experience developing recipes from scratch and scaling them to production volume.
- Experience working with industrial food equipment.
- Strong understanding of shelf life factors.
- Strong organizational and project management skills.
- Effective communication and collaboration skills.
- Culinary degree or equivalent experience in pastry.
Preferred
- Experience with mooncake or Asian confectionery production.
- Background in French pastry or European baking techniques.
- Familiarity with Vietnamese food labeling regulations.
