- Supervise and ensure all kitchen operations comply with hygiene and food safety standards
- Conduct regular hygiene inspections across kitchen, storage, receiving, and preparation areas
- Monitor food labeling, FIFO, temperature logs, cleaning schedules, and food storage practices
- Identify potential hygiene risks and take proactive corrective actions
- Provide guidance on proper food handling and hygiene practices
- Support food safety investigations and guest-related hygiene concerns
Training & Team Support
- Coordinate and deliver basic food hygiene training for new hires and team members
- Promote a culture of cleanliness, discipline, and food safety awareness
- Support management in training, coaching, and monitoring team compliance
Audit & Compliance
- Maintain hygiene records, food safety documentation, and audit files
- Support internal audits, external inspections, and regulatory compliance
- Ensure all documentation meets company and local food safety requirements
- Follow up on corrective actions and ensure closure
Operations Support
- Coordinate with kitchen and related departments on hygiene-related matters
- Support pest control, sanitation processes, and hygiene improvement plans
- Report risks, unsafe practices, and maintenance issues promptly
General Responsibilities
- Follow all safety, hygiene, and company policies and procedures
- Maintain professional appearance and workplace discipline
- Support team collaboration and ensure service standards are met
- Perform other duties as assigned

Yêu cầu công việc
- Education & Qualification
Diploma or relevant qualification in Food Safety, Hospitality, Culinary, Administration, or related field
Food Safety / Hygiene certification is an advantage
Basic knowledge of HACCP, FSMS, and food safety regulations preferred
- Experience
Experience in kitchen administration, hygiene, food safety, or F&B operations preferred
Background in hotel, resort, restaurant, or hospitality environment is an advantage
Experience with audits, documentation, or hygiene records is a plus
- Skills & Knowledge
Strong administrative and organizational skills
Good attention to detail and follow-up
Basic computer skills (Word, Excel, email)
Good communication and teamwork skills
Basic understanding of kitchen operations, FIFO, labeling, and hygiene standards
