Administration

• Constantly update and print the wine list with accurate vintages, spelling, prices and available items

• Update and print the cigar list

• Check the conditions of the wine list in all the restaurants

• Issue Purchase Request

• Work closely with beverage store keeper to ensure that no items is running out

• Work closely with beverage store keeper and purchasing Manager for accuracy of the vintage ordered and received

• Provide high and low season Par Stocks

• Control and ensure that all Par Stocks are respected

• Inform Director of Food & Beverage about any price increase

• Monitor the store inventory and beverage costs

• Ensure accurate wine reference in the Micros system

• Work closely with wine supplier to develop the wine list according the guidelines of DFB

• Send working schedule to FB office

• Communicate any guest complain to Asst FB

• Handle any other daily administrative tasks

• Submit the monthly training plan to Asst FB

• Issue any needed maintenance orders

Financial and Revenue Responsibilities

• Know and communicate the beverage budget of each outlet

• Is active and work hard to reach the budget

• Minimize cost linked to F&B operations

Training and Human Resources Management

• Develop trainings in accordance to the operational needs

• Train the team according to the training plan

• Establish effective employee relations and maintains the highest level of professionalism, ethic and attitude towards all hotel guests, clients, heads of department and employees

Guest Service Responsibilities

• Ensure full guest satisfaction at any time

• Stimulate guest purchasing desire

• Develop customers loyalty and recognition

• Introduce and up sell any special events / promotions

• Gather guest feedback and report to DFB

Operational Responsibilities

• Ensure full implementation of the wine and beverage selection and service relative Sofitel brand standards

• Ensure proper application in operations of all the trainings and given instructions

• Ensure proper set up, cleanliness of each beverage / wine storage room

• Ensure proper storage conditions of each bottle of wine

• Ensure excellent conditions and tidiness of the Wine Cellar

• Ensure excellent conditions and storage of each cigar

• Communicate efficiently with Pantry Manager and Outlet Manager on all out of stock wine

• Minimum 3 years experience in the same position
