Responsible for ensuring that sanitation and hygiene standards are consistently maintained across all operational areas. This role is critical in preventing contamination, promoting health and safety, and complying with regulatory requirements.

Monitor Hygiene Standards: Conduct regular inspections of food preparation areas, storage rooms, and waste disposal zones to ensure cleanliness and compliance.

Develop Sanitation Protocols: Create and update hygiene manuals and cleaning schedules based on industry best practices and regulatory guidelines.

Coordinate Testing & Audits: Liaise with external agencies for microbiological testing and participate in internal audits.

Train Staff: Educate employees on hygiene practices, proper use of cleaning agents, and personal hygiene standards.

Maintain Records: Keep detailed logs of cleaning activities, inspection results, and corrective actions.

Oversee Cleaning Operations: Supervise janitorial teams and ensure proper use of equipment and chemicals.

Compliance Management: Ensure adherence to local health codes, food safety regulations, and company policies.

Ensure that all control points of food production & services are strictly adhered to

Ensure that all Food & Beverage Handlers are fully trained as per operational requirements

Conducts regular food safety audits in all the Food & Beverage areas of the hotel

Assist in implementation of all issues related to fire & life safety within food production areas

Demonstrates awareness of occupational & environmental health and safety policies

Conducts regular inspection of all areas & recommends corrective action measures to help protect workers from potentially hazardous work methods, processes, or materials within the designated food production areas.

Maintain attendance records and shift rosters on Cadena

Diploma or degree in Food Safety, Environmental Health, Hospitality Management, or related field

Strong knowledge of HACCP, ISO standards, and local health regulations

Communication and training skills

Attention to detail and strong observational skills

Experience in hospitality, food production, or industrial hygiene preferred

Experience in the similar position in international 4-5 star hotel/resort is an advantage

Good command in English  language

Service mind oriented
